Ranch Style Beans For Fiesta Biscuit Cassarole
Makes: 5 servings
Prep Time: 30 mins
Cook Time: 10 mins

Ingredients
27 ounces pinto beans
27 ounces water (used to cook pinto beans)
8 ounces bacon, cooked and chopped
1 onion, chopped
2 3 tomatoes, diced
1/2 bunch bunch fresh cilantro, chopped
10 ounces rotel tomatoes
to taste salt
to taste pepper

Notes / Directions
1 Heat pinto beans and water in saucepan over medium heat.
2 Chop and cook bacon in large skillet until crispy.
3 Add onion and cook 5 minutes or until soft.
4 Add tomatoes, cilantro, and Rotel tomatoes. Heat through.
5 Add pinto beans and water. Heat through. Add salt and pepper to
taste.
6 Serve with rice and tortillas.
