Gluten Free: Ham and Cheese Tarts

Ham and Cheese Tarts



· Preheat oven to 350 degrees and mist a 12 cup muffin pan with cooking spray.


· Finely chop ¼ lb. sliced ham (or use ¼ lb of cooked bacon chopped), 4oz Swiss cheese and 3 green onions; transfer to a bowl and set aside.


· Cook 1 cup of gluten free noodles according to page instructions; drain.


· Add noodles to the bowl with ham mixture; stir to combine. Divide mixture among muffin cups.


· In a medium bowl, beat together 3 eggs, 1 ½ cups half-and-half, 1 tsp. salt and a pinch of nutmeg.


· Spoon egg mixture evenly into muffin cups; bake about 35 minutes.


· Serve 2 or 3 tarts to each person with mixed greens on the side.
